Recipe 1: Zucchini Slice Cubes

  • 5 Eggs
  • 1 cup (150g) self-rising flour
  • 375g grated zucchini
  • 1 large, finely sliced onion
  • 200g chopped chicken bacon
  • 1 cup grated cheese
  • 1/4 cup (60ml) vegetable oil

How To Make It?

  • Step 1:

Preheat the oven to 170°C

Take a large bowl and beat eggs until combined. Then add the flour and beat until it forms a smooth batter.

Once the batter is ready, add the remaining ingredients- zucchini, onion, chicken bacon, oil, and cheese; and stir well to combine it.

Grease a 30cm by 20cm pan.

  • 1 cup (70g) wholemeal fresh breadcrumbs
  • 1 Egg
  • 1 egg lightly beaten
  • 1 finely grated zucchini
  • 1 finely grated carrot
  • 1/2 grated onion
  • 1/4 cup finely chopped coriander leaves
  • 1/4 cup flat chopped parsley leaves
  • 4 sheets frozen puff pastry
  • 1/4 cup flour
  • 1 table spoon sesame seeds
  • Tomato sauce, or sweet chili sauce (optional)
  • 500g minced organic chicken

How To Prepare It?

  • Step 1:

Preheat the oven to 200°C

  • Step 2:

Line the pan with a baking sheet

  • Step 3:

Mix breadcrumbs, chicken, and egg in a food processor until it is combined properly.

  • Step 4:

Take a large bowl and pour out the mixture. Then, add the vegetables and herbs and mix them well until combined.

  • Step 5:

Flour the surface and place 1 pastry sheet on it, and cut into halves.

Spoon one eighth of the filling on the pastry sheets in the lengthways, in the centre alignment of each piece.

  • Step 6:

Fold one side of the pastry and tuck it next to the mixture. Then fold the other side over it to form a roll. Once the sides are sealed, roll it with a light hand to get the shape. Repeat the same with the other pastry sheets and fillings.

  • Step 7:

Once you have all your rolls ready, cut two tiny slashes on the sides to prevent them from splitting. Do this for each roll.

  • Step 8:

Place the rolls on the baking pan, with each roll being placed at a 1-inch distance. Cover the baking pan and chill it for 30 minutes.

Lightly beat the egg. Then brush the rolls with the beaten egg and glaze it with sesame seeds.

Bake the rolls for 30-35 minutes, until the puff pastry changes into a brownish colour. Once cooked, serve the rolls with the sauce on the side.
